Oliver’s Birthday Cakes

It is slowly becoming a bit of a tradition for me to bake Oliver a birthday cake or two. I use his birthday largely as motivation to try and challenge myself in the kitchen with something difficult to bake. This year I decided to do two cakes. The more difficult Charlotte Russe, and a fail-safe chocolate roulade. Both cakes turned out looking amazing. Probably two of the best looking cakes I have done. Unfortunately for the Charlotte the strawberry mousse didn’t completely set, making it a bit soupy once we cut into it. I have struggled a bit with getting solid mousses, and wonder if it is because I am using frozen fruit, or if I am not doing my gelatin correctly. Both tasted great however. I especially loved the chocolate pistachio roulade. I will have to make that again soon. Here are some photos of the cakes.
